I use white and various shades of light gray (Prismacolor 10 and 30% cool or warm gray) and lavender. For human hair, that is. For isolated hair like whiskers, i make a dent tn the paper with a stylus and color over with background color.

Also, keep in mind that you don't actually draw the white fur, (at least not on white paper). You create the illusion that there is white fur by drawing the shadows. Here's an example in my drawing.

I use a lot of different colors to create white. I used to hate doing white animals but now I don't mind it. I use lots of greys (french, warm, cool) depending on whether you want a warm or cool tone, also I have used lavender grey and maybe even some cream depending on the lighting. Look close at the reference photo to better judge the colors that you see. A color picker also helps. Here is a portrait I did of white wolves.

MB, in the thread downstream about what paper animal artists use, Peggy and I got talking about doing white fur and she posted several of her wonderful paintings. Definitely check it out!
I feel your pain regarding white fur. I'm planning on doing a portrait of my white pug, Gracie, just as soon as I figure out how to do her fur properly. If you figure it out sooner, I hope you'll let me know!

I think the important thing to keep in mind is that any white in an image is never 100% white. If you look closely you'll find varying shades of greys/blues depending on the picture.
